Infusions
Place the vermouth and chamomile in a bowl and stir to combine. Let stand at room temperature for 1 hour, stirring occasionally. Strain through a fine-mesh sieve lined with several layers of cheesecloth, then funnel back into the vermouth bottle and refrigerate until ready to use, up to 3 months.
